One of the greatest gifts you can give your metabolism is not another supplement or another restrictive diet.
It is simply time.
Our modern world encourages us to eat almost continuously. Coffee with cream before sunrise. Breakfast on the way to work. Mid-morning snacks. Lunch. Afternoon snacks. Dinner. Dessert. A bowl of popcorn while watching television.
For many people, the body is digesting food for 14–16 hours every day, leaving very little opportunity to transition into a fasting state.
The goal of the Unstacking Diet is not to starve the body.
It is to give the body a predictable period of rest, repair, and metabolic flexibility every day.
What Is an Overnight Fast?
An overnight fast is simply the period between your last meal of the day and your first meal the following morning.
If you finish dinner at 7:00 PM and eat breakfast at 7:00 AM, you have completed a 12-hour fast.
As your body adapts, many people naturally progress to a 13–14 hour overnight fast, which has become the target recommendation in this Fellowship.
Unlike extreme fasting protocols, this approach is simple, sustainable, and compatible with family meals, work schedules, travel, and social life.
The goal is consistency—not perfection.
Why Timing Matters
Every time we eat, insulin rises to help move nutrients into our cells.
This is a healthy and necessary response.
The problem is not insulin itself.
The problem is that many people rarely allow insulin levels to return to baseline before eating again.
By creating a daily fasting period, the body has an opportunity to gradually transition away from continuous digestion and nutrient storage.
Researchers call this time-restricted eating (TRE)—consuming all daily calories within a consistent eating window while allowing a longer fasting period overnight.

Longer fasting windows are not necessarily better.
A healthy eating pattern that can be maintained for years will almost always outperform an extreme strategy that lasts only a few weeks.

Our metabolism follows a biological clock.
Hormones involved in blood sugar regulation, digestion, and energy metabolism change throughout the day.

Eat enough to meet your nutritional needs.
Stop eating two to three hours before bedtime whenever possible.
Hydration remains important throughout both the eating and fasting periods.
Water, plain sparkling water, black coffee, and unsweetened tea generally do not meaningfully interrupt an overnight fast for most healthy adults.
Who Should Use Caution?
Although overnight fasting is appropriate for many adults, it is not appropriate for everyone.
Speak with your healthcare provider before beginning fasting if you:
Have diabetes treated with insulin or medications that can cause hypoglycemia
Are pregnant or breastfeeding
Have a history of an eating disorder
Are significantly underweight or malnourished
Have advanced kidney or liver disease
Are recovering from major illness or surgery
Nutrition should always support health—not compromise it.
